A nice dessert that can be altered to be less sweet; Makes great mini or regular sized muffins.

Recipe Ingredients for Vegan Chocolate Chip Muffins

2/3 cup soy milk
1/2 cup vegetable oil
1 banana, mashed
1 tsp vanilla
1/3 cup brown sugar
1/3 cup sugar
2 cup flour
2 tsp baking powder
1/2 tsp salt
1 1/2 cup chocolate chips

Recipe Directions for Vegan Chocolate Chip Muffins

  1. Preheat oven to 400

  2. Combine both sugars and vegetable oil

  3. Mix in Mashed Banana

  4. Add Vanilla

  5. Separately, sift together flour, baking powder and salt

  6. Alternate adding flour mixture and soy milk to Banana/sugar mix

  7. Add Chocolate chips

  8. Bake for 12-15 minutes or 15-18 minutes for larger muffins
