Very good chocolate chip cookies. Many say they are the best ever.

Recipe Ingredients for Vegan chocolate chip cookies

1/2 cup organic olive oil
3/4 cup organic raw sugar
1/2 cup chopped pecans
1 teaspoon vanilla
1 1/2 tablespoon baking powder
1 1/2 cup organic whole wheat pastry flour
1/2 teaspoon sea salt
3/4 teaspoon cinnamon
1/4 cup soy milk
2/3 cup chocolate chips

Recipe Directions for Vegan chocolate chip cookies

  1. Mix dry ingredients well.

  2. Add wet ingredients and stir until consolidated.

  3. Spoon onto cookie sheet and form into cookies with spoon and fingers. Cookies will rise when cooked so don't crowd.

  4. Bake at 350 F for about 10 minutes. Try to remove the cookies from the oven when they just start to brown around the edges.
