This is a modified recipe with 1/2 of the flour replaced with almond meal. From the Joy of Vegan Baking, p. 110

Recipe Ingredients for Vegan Chocolate Chip Cookies

4 1/2 tsp Ener-G Egg Replacer
6 tbsp water
1 cup nondairy butter
3/4 cup granulated sugar
3/4 cup brown sugar, firmly packed
2 tsp vanilla extract
1 1/8 cup flour
1 1/8 cup almond meal
1 tsp baking soda
1 tsp salt
1 cup semisweet chocolate chips

Recipe Directions for Vegan Chocolate Chip Cookies

  1. Preheat the oven to 375 F.

  2. Whip the egg replacer and water together, until it's thick and creamy.

  3. In a large bowl, cream the butter, sugars, and vanilla. Add the egg replacer mix and thoroughly combine.

  4. In a separate bowl, combine the flour, baking soda, and salt. Gradually beat the flour mix into the wet mixture until it begins to form a dough. When it is almost thoroughly combined, stir in the chips.

  5. Bake on the cookie sheet for 8-10 minutes, or until golden brown. Let stand for 2 minutes; remove to wire racks to cool completely.
