This originally came out of my "American Girl" magazine back in the early nineties. One of easiest, one pan, vegan chocolate cakes ever. Calories reduced by substituting unsweetened applesauce for oil.

Recipe Ingredients for Vegan Chocolate Cake

3 cups flour
2 cups sugar
1/3 cup cocoa
2 teaspoons baking soda
1/2 cup unsweetened applesauce
2 teaspoons vanilla
2 tablespoons apple cider vinegar
2 cups water, cold

Recipe Directions for Vegan Chocolate Cake

  1. Preheat oven to 350 F.

  2. Mix all dry ingredients (top 4 in the list) together in a dry, 9" x 13x baking pan. Or, you can split the recipe into two small cake rounds.

  3. Mix all the wet ingredients except the water together.

  4. Make three wells in the dry mixture and add the wet mixture into the holes.

  5. Pour the two cups of cold water over the entire pan and wisk together with a fork. The batter should be smooth and lump free.

  6. Bake for 30-35 minutes until the top is springy and a toothpick test comes out clean.
