Vegan Chocolate Banana Squares Recipe

Vegan chocolate squares with coffee and coconut for added pleasure :-)

Recipe Ingredients for Vegan chocolate banana squares

1 cup brown sugar
1/2 cup margarine
1 cup flour
1 cup oatmeal
3 tsp baking powder
2 tbsp cinnamon
4 bananas
1 cup orange juice
1/2 cup soymilk
1 tbsp cider vinegar
2 cups espresso coffee
100 grams dark chocolate
5 tbsp shredded coconut
4 tbsp icing sugar

Recipe Directions for Vegan chocolate banana squares

  1. In a bowl mix vegan margarine such as Earth Balance with sugar and cream them.

  2. Mix and add orange juice, soy milk and cider vinegar and mashed bananas.

  3. Make espresso and pour on a pan. Melt the dark chocolate in the coffee, and pour half of the mixture into the bowl.

  4. In another bowl, mix flour, oatmeal, baking powder, 2 tbsp shredded coconut and cinnamon.

  5. Add the flour mixture to the wet ingredients.

  6. Pour it on an ovenproof rectangular Pyrex dish. Bake at 350 F for about 35 minutes.

  7. Once cooled, heat the rest of the coffee-chocolate-mixture and add 3 tbsp icing sugar. Bring to a bubbly boil while stirring. Let cool.

  8. Decorate the cake with the icing and remaining shredded coconut.

  9. Cut to 16 (or 20) squares. Enjoy when cooled.
