Meatless Option, high protein chili

Recipe Ingredients for Vegan Chili

1/2 cup black beans
1/2 cup chick peas
1/2 cup red kidney beans
1 cup green peppers
1 cup onions
1/2 cup ketchup
2 cups crushed tomatoes
4 tbsp chili powder
4 tbsp ground cumin
2 cups smart ground
16 ounces vegetable stock

Recipe Directions for Vegan Chili

  1. I use canned beans, but this recipe calls for dried...1/2 cup dried = about 1 cup of cooked. Boil the chickpeas, black beans, and kidney beans until soft.

  2. Mix all ingredients together in stock pot and bring to a slow boil. Simmer until thick.
