One can add in meat if desired. Or add in 1/3 cup wheat bulgur for that meaty texture. I made it without the bulgur and it tasted fine. I also added in salt and pepper to taste and a 1/2 tsp tumeric

Recipe Ingredients for Vegan Chili

4 Roma Tomatoes
3 cloves of Garlic
1 red pepper
1 green pepper
1 medium yellow onion
3 celery stalks
3 cups kidney beans
1/2 cup red wine
1/2 cup tomato sauce
1/4 cup tomato paste
2 tbs brown sugar
2 cups water
1/2 tsp dried oregano
1/2 tsp cumin
1/4 tsp allspice
1/4 tsp cinnamon
1 pinch of cayenne pepper
2 small red potatoes

Recipe Directions for Vegan Chili

  1. Saute onion and garlic for 5 mins

  2. Add all veggies and let simmer for 10 mins or until soft

  3. Add in spices

  4. Add beans, water, tomato paste, tomato sauce, wine and chopped tomatoes

  5. Simmer for 20 minutes, covered

  6. Serve with avocado (optional)
