Vegan Chili Recipe

Adapted from a Rachel Ray recipe.

Recipe Ingredients for Vegan Chili

1 tbsp Olive Oil
16 oz Portobello Mushrooms
1 cup chopped raw Vidalia Onion
3 stalk, medium (7-1/2" - 8" long) Celery
1 medium raw Bell Pepper Red
5 cloves, raw Garlic
5 tbsp Chipotle Peppers
3 tsp Cumin
1 can or bottle (12 fl oz) Beer, Regular
15 oz Black Beans
15 oz Crushed Tomatoes
1 cup Vegetable Broth
3 Teaspoon Thyme

Recipe Directions for Vegan Chili

  1. Use a deep skillet and set the heat to medium-high and add the tablespoon EVOO. Add the mushrooms and begin to brown them before adding the other veggies. After 2-3 minutes, the mushrooms will begin to shrink and soften. Push the mushrooms off to one side of the pot and add all the remaining veggies to the opposite side of the pot surface. Once the onion, celery, pepper and garlic have been working for a few minutes as well, mix the veggies with the mushrooms.

  2. Season with chipotles in adobo or chipotle powder and cumin. Add in the beer to deglaze the pot, scraping up all the pan drippings. Reduce the beer by half, about 2 minutes. Add the black beans, tomatoes, broth and thyme to the chili and simmer for 10 minutes for the flavors to combine. Taste to adjust the seasonings.

  3. Top bowls of the chili with finely chopped raw onions.
