Vegan "Chicken" Tikka Masala Recipe

Recipe Ingredients for Vegan "Chicken" Tikka Masala


Marinade:
2 tbsp. lemon juice
2 tsp. ground cumin
1 tsp. ground red pepper
2 tsp. black pepper
1 tsp. cinnamon
1 tsp. salt
2 tsp. minced fresh ginger

Sauce:
1 tbsp. margarine
2 cloves garlic, minced
2 tsp. ground coriander
1 tsp. ground cumin
1 tsp. paprika
1 tsp. garam masala
1/2 tsp. salt
8 oz tomato sauce
1 cup coconut milk
1/4 cup frozen peas
1/4 cup fresh cilantro, chopped

Recipe Directions for Vegan "Chicken" Tikka Masala

  1. Cut 4 vegan "chicken" cutlets into 1" cubes.

  2. Mix marinade ingredients with 1 cup soy yogurt.

  3. Add "chicken" cubes" & let marinate 1 hour.

  4. Broil the marinated cubes, turning occasionally, 8-10 minutes.

  5. To make sauce, melt margarine in medium skillet over medium heat. Add garlic & cook 1 minute. Stir in spices. Stir in tomato sauce & simmer 15 minutes. Add coconut milk & peas to sauce.

  6. Add "chicken" to sauce & simmer.

  7. Garnish with cilantro.
