Moist, tasty, and not sickeningly sweet!

Recipe Ingredients for Vegan Cherry-Vanilla Cupcakes

1 1/2 cups sugar
3/4 cup margarine
4 1/2 cups flour
1 1/2 cups baking powder
1/4 tsp. salt
2 1/2 cups Vitasoy light vanilla or other light soy milk
1 tbsp. vanilla extract
1/2 cup cherries, chopped

Recipe Directions for Vegan Cherry-Vanilla Cupcakes

  1. Beat margarine and sugar; add remaining ingredients and mix well. Pour into prepared muffin tins, and bake at 375 degrees for 30-35 minutes.

  2. Cool completely.

  3. Optional: Ice with "chocolate-tofu frosting" (in my recipes), then top with a cherry.
