Vegan "cheese" enchiladas (note: the cheese alternative does have caseinate in it, which is a milk protein with no cholesterol)

Recipe Ingredients for Vegan "Cheese" Enchiladas

8 tortillas Extra Thin Yellow Corn Tortillas
12 oz Cheese Alternative
1 tsp dry mix Old El Paso Seasoning Mix Enchilada
1 cup Tomato Sauce

Recipe Directions for Vegan "Cheese" Enchiladas

Mix the enchilada sauce according to package instructions. Spread sauce on both sides of a corn tortilla, fill with shredded vegan cheese and place in casserole dish. Pour remaining sauce and cheese over enchiladas. Bake at 350 for about 20 minutes or until bubbly. I often sauteed cooked onion and bell pepper for extra flavor.
