Recipe Ingredients for Vegan Carrot Zucchini Muffins

4/5 cup Whole Wheat Flour
1/5 cup Rolled Oats
1 cup(244 g) Applesauce
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, grated Carrots
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Vanilla Extract
1 tsp Cinnamon, Ground
1 cup, unpacked(145 g) Sugars, Brown

Recipe Directions for Vegan Carrot Zucchini Muffins

  1. Combine dry ingredients.

  2. Make a well in the mixture and add applesauce and vanilla.

  3. Fold in grated zucchini and carrot.

  4. Spoon in to a lined 12-muffin tin. (I make mini muffins so I get over 30 servings.)

  5. Bake in a 350 degree oven for 20 minutes.
