Vegan muffins made with whole wheat flour, whole wheat bran, typical baking ingredients, and added carrots and raisins. Modified from The Cookbook for People Who Love Animals.

Recipe Ingredients for Vegan Carrot Raisin Bran Muffins

1 1/4 cup whole wheat flour
1 cup wheat bran
1 teaspoon baking soda
1 teaspoon cinnamon
1/3 cup oil
1/2 cup sugar
1 cup light soy milk
1 teaspoon vanilla
1/2 cup raisins
1/2 cup shredded carrots

Recipe Directions for Vegan Carrot Raisin Bran Muffins

  1. Preheat oven to 400 degrees

  2. Mix all dry ingredients

  3. Mix all wet ingredients in a separate bowl

  4. Mix dry ingredients into wet ingredients

  5. Add carrots and raisins

  6. Grease muffin pan

  7. Fill each cup of muffin pan halfway with batter

  8. Bake for 25 minutes
