Recipe Ingredients for Vegan Carrot Muffins

1 cup flour
1 cup whole wheat flour
1 tbsp cinnamon
2 tsp baking soda
1/3 cup sugar
1/2 tsp salt
2 cups flax
3/4 cup pecans
3/4 cup raisins
165 g carrot, (1.5 cup puree)
1/4 cups apple sauce
1/4 cups orange
3/4 cup safflower oil
2 tsp vanilla
1/2 cup rice milk
1/4 cup brown sugar
1/2 cup orange juice

Recipe Directions for Vegan Carrot Muffins

  1. Mix dry.

  2. Mix wet.

  3. Mix wet into dry.

  4. Bake 20-25 minutes at 400F.
