Like cabbage rolls with out the meat or rolling. Can also be made by placing everything in a slow cooker with some extra liquid and set to cook on low over night fro 12 hours.

Recipe Ingredients for vegan cabbage casserole

1/2 cup cooked lentils
1/4 cup onions
1/2 cup cooked brown rice
1 tsp curry powder
28 oz diced tomatoes
1 cup shredded cabbage

Recipe Directions for vegan cabbage casserole

  1. cook the lentils and onions and rice together with the curry to make a dahl - this can be saved for future use.

  2. dump can of tomatoes, cabbage and dahl into pot and let cook until cabbage is translucent.
