Very good meat substitute - freezes well and can be shaped easily into small 100 cal. patties.

Recipe Ingredients for Vegan burgers.

1/2 cup raw almonds
1/2 cup roasted peanuts
1 cup pumpkin seeds
1 cup whole wheat flour
1 cup kidney beans
1 cup corn
1/2 cup chopped carrots
1/2 cup peas
4 tablespoons olive oil

Recipe Directions for Vegan burgers.

  1. Using a food processor, grind nuts. Add all other solid ingredients and up to 2 tablesopons oil.

  2. Process to desired consistency. Season to taste with herbs, paprika, salt, and pepper.

  3. Form into shapes, brush on both sides with oil and bake in hot oven for 10 minutes.
