Tasty Vegan alternative to cheesy broccoli quiche.

Recipe Ingredients for Vegan Broccoli Quiche

1 T coconut oil
1 medium onion
3 garlic cloves
3 cups broccoli florets
1 t thyme
1/2 t turmeric
1 t rosemary
1 t salt
1/2 cup cashews
16 oz tofu
1 t yellow mustard
1 1/2 cups white whole wheat flour
3 servings Non-Gmo Earth Balance Buttery Spread

Recipe Directions for Vegan Broccoli Quiche

  1. Saute onion and garlic in 1 T coconut oil. Add broccoli and spices and cook 10 minutes.

  2. Use food processor and add/blend cashews. Add tofu and mustard and blend until smooth. Add 1 cup broccoli mixture to processor and blend. Taste and add salt and nutritional yeast accordingly.

  3. Prepare pie crust. Blend 1.5 cups flour with 3 T butter. Add water 6-9 T until consistency is okay. Bake crust 10 minutes.

  4. Add mixture to crust and bake 40 minutes at 350 degrees.
