Hearty vegan bolognese made with tempeh and lots of veggies!

Recipe Ingredients for Vegan Bolognese

8 oz Organic Tempeh - Soy
1 large Onions
5 clove Garlic
2 tbsp Extra Virgin Olive Oil
1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
2 medium Carrots
1 small Squash, Summer, Zucchini, Includes Skin
6 serving Organic Tomato Basil Pasta Sauce
8 tsp Natural Cane Turbinado Sugar
1/4 tsp Sea Salt
3 tsp Italian Seasoning
5 medium mushroom Portobello Mushrooms

Recipe Directions for Vegan Bolognese

Chop veggies and saute in oil until soft. Crumble tempeh in with veggies, add sauce and simmer for at least 30 minutes. Serve with pasta!
