Recipe Ingredients for Vegan blueberry muffins

2 cups fresh blueberries
2 1/4 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/4 cup soy margarine
1 1/2 cups white sugar
2/3 cups unsweetened applesauce
1 teaspoon vanilla extract
1 cup plain soy milk

Recipe Directions for Vegan blueberry muffins

  1. Cream sugar and margarine, add applesauce and vanilla

  2. Mix the dry ingredients together and then with the wet ones mixing in the milk as well

  3. Then the blueberries coated in 1/4 cup of the flour

  4. 375 degrees for 20-25 minutes
