Recipe Ingredients for Vegan Blueberry Buckle

2 cups oat flour
2 t. baking powder
1/4 t. salt
1/2 cup pumpkin, canned
3/4 cup Splenda
1 tsp. vanilla extract
1/2 cup almond breeze, unsweetened
4 1/2 cups fresh blueberries

For the Topping:
1 cup oat flour
1/2 cup packed brown sugar
1/4 t. salt
6 T. pumpkin, canned

Recipe Directions for Vegan Blueberry Buckle

  1. . Preheat the oven to 350 F. Lightly grease a 9" springform pan with dairy-free soy margarine. Dust with flour and tap out the excess. Set aside.

  2. 2. In a medium-sized mixing bowl, sift together the flour, baking powder and salt. In another large mixing bowl, using an electric hand mixer, beat together the dairy-free soy margarine and sugar on a medium speed setting until the mixture is fluffy, about 3 minutes. Add the vanilla extract and beat until combined. Add the dry ingredients in several additions, alternating with the almond milk, until both have been incorporated. Gently fold in 3 1/2 cups of the blueberries and pour the batter into the prepared pan. Sprinkle the remaining blueberries on top of the batter.

  3. 3. Make the topping. In a small mixing bowl, mix together the flour, sugar and salt until well combined. Using a fork or pastry cutter, cut in the dairy-free soy margarine until the mixture resembles a coarse meal. Sprinkle the topping over the cake and bake on a middle oven rack for 50-65 minutes, or until a toothpick inserted into the center emerges clean. Allow the cake to cool on a wire cooling rack for 10 minutes before removing from the pan.
