Recipe Ingredients for Vegan Blueberry Bran Muffins

1 1/2 cups white whole wheat flour
1 cup bran
1 teaspoon baking soda
1/4 teaspoon salt
1 cup unsweetened soymilk
1 tablespoon vinegar
1/4 cup light molasses
1/4 cup unsweetened applesauce
1 cup frozen blueberries

Recipe Directions for Vegan Blueberry Bran Muffins

  1. Preheat the oven to 350. Combine the dry ingredients.

  2. Mix the soymilk and vinegar to make vegan "buttermilk".

  3. Mix together the wet ingredients.

  4. Stir together wet and dry and add the blueberries.

  5. Spoon mixture into liners in muffin tin.

  6. Bake for 25 minutes.
