Recipe Ingredients for Vegan Blackstrap Gingersnaps

3/4 cup sugar
1/3 cup blackstrap molasses
1/2 cup safflower oil
3 tablespoons soymilk
1/2 teaspoon vanilla extract
1 3/4 cup flour
3 teaspoons ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt

Recipe Directions for Vegan Blackstrap Gingersnaps

  1. Combine sugar and wet ingredients in a large bowl.

  2. Sift together the rest of the ingredients.

  3. Add the dry ingredients to the wet ingredients.

  4. Drop cookies onto greased cookie sheets by the tablespoon. Round drops with wet hands. Flatten slightly.

  5. Bake at 350F for about 12 minutes,
