Delicious quick and easy black bean soup. Great for all types of eaters!

Recipe Ingredients for Vegan Black Bean Soup

1 tbsp olive oil
1 large onion
1 celery stalk
2 carrots
4 cloves garlic
2 tbsp chili powder
1 tbsp cumin
4 c water
60 oz black beans
15 oz corn
15 oz tomatoes
1 tbsp salt

Recipe Directions for Vegan Black Bean Soup

  1. Heat oil in a large pot over medium. Saute onion, carrots and garlic for 5 minutes. . Season with chilli powder, cumin, and black , pepper; cook for 1 minutes. Stir in Water and 2 cans of beans, and corn. Bring to a boil.

  2. Meanwhile, in a food processor* or blender, process remaining 2 cans beans and tomatoes until smooth. Stir into boiling soup mixture, reduce heat to medium and simmer for 15 minutes.

  3. *If a food processor is not available you can use 2 tbsp corn starch mixed with a 1/4 c of warm water to thicken. Dissolve corn starch completely in water and add to soup slowly as is simmers.
