Chunky vegan chili made of whole foods, tasty black beans and packed with flavor and spicy hot! Oh yeah, no fat either. (Karen Langevin, ABQ, NM)

Recipe Ingredients for Vegan Black Bean Chili

16 oz black beans
3 cloves minced garlic
1 1/2 tbs Vegetable Broth Powder
1 large onion
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
2 c frozen corn
8 oz organic tomato sauce
2 tsp salt
1 tsp pepper
2 oz Ground Red Pepper Spice

Recipe Directions for Vegan Black Bean Chili

  1. Sort and wash beans.

  2. Dice all vegetables in big chunks.

  3. Put all ingredients into a large pot and fill with water.

  4. Bring to a brisk boil and lower to med.

  5. Cook over medium heat approximately 5 hours.

  6. Serve with couscous or brown rice. Enjoy!
