Recipe Ingredients for Vegan Bean Soup

1 tbsp peanut oil
1/2 medium onion
1 clove garlic
1 medium carrot
2 stalks celery
1/2 tsp dried thyme
1/2 tsp ground pepper
3/4 cup stock, vegetable
1/2 cup Fusilli, whole grain
10 oz beans, all types, canned
1 cup chopped broccoli
1/2 cup frozen peas

Recipe Directions for Vegan Bean Soup

  1. In saucepan, heat oil over medium heat; cook onion, garlic, carrot, celery, thyme and pepper, stirring occasionally, until vegetables are softened, 5 minutes.

  2. Add stock, pasta and beans; bring to boil. Reduce heat and simmer until tender, 4 minutes.
