This banana bread has just the right amount of sweetness and is really moist. I use Blue Moon, which is an orange-and-coriander-flavored white ale, but I have had good experiences with all different kinds of beer.

Recipe Ingredients for Vegan Banana Raisin Oat Bread

1 1/2 cup wheat flour
1/2 cup oats
1/2 cup raw sugar
1 tsp. baking powder
1/2 tsp salt
12 oz. beer
1/2 cup applesauce
2 bananas
1/2 cup raisins
1 tsp. vanilla
1 1/2 tsp. cinnamon

Recipe Directions for Vegan Banana Raisin Oat Bread

Preheat oven to 350. Mash bananas. In separate bowl, sift flour and combine dry ingredients. Mix and add bananas, raisins, vanilla and applesauce to dry ingredients, then slowly pour in beer. Mix just until wet. Bake in pan-sprayed 9x5 loaf pan one hour or until knife inserted in center comes out clean (check after 50 minutes). Let cool on wire rack ten to fifteen minutes before cutting.
