delicious vegan banana muffins with a good amount of protein. i used life's basics chia plant protein.

Recipe Ingredients for Vegan Banana Protein Muffins

60 grams white whole wheat flour
40 grams chia protein powder
1/2 tsp baking soda
1/4 tsp cinnamon
3/8 tsp baking powder
3/8 tsp salt
3 oz almond milk
4/5 tsp pure vanilla extract
1 11/20 oz maple syrup
3/4 T lemon juice
192 grams mashed banana

Recipe Directions for Vegan Banana Protein Muffins

  1. mix dry ingredients

  2. mash bananas and mix with wet ingredients

  3. mix wet and dry together

  4. pour into muffin tins

  5. bake at 350 for 30 minutes until done
