I came up with this recipe looking for a vegan substitute for my favorite pancake recipe that originally used buttermilk and eggs. The vinegar makes the baking soda rise, much like in Wacky Cake. However the batter doesn't keep well and is best if cooked asap. They go great with maple syrup or any kind of fruit

Recipe Ingredients for vegan banana pancakes

2 1/2 cups almond breeze
1/4 cup canola oil
1 tsp vanilla
2 tsp cinnamon
1 medium banana
4 oz tofu
1 tbs red wine vinegar
2 cups whole wheat flour
2 tsp baking soda
1/4 cup sugar

Recipe Directions for vegan banana pancakes

  1. combine banana, tofu and wet ingredients including sugar in blender.

  2. combine dry ingredients in separate bowel.

  3. pour liquid ingredients in large bowl and add dry ingredients taking care not to over mix. cook immediately.

  4. freeze well, and if small enough will easily reheat in a toaster.
