Recipe Ingredients for Vegan Banana Oat Carob Muffins

1 cup spelt flour
3/4 cup spelt flour
1/4 cup carob flour
1 cup old fashioned oats
1/2 cup brown sugar
1 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
1 cup soy milk
1/2 teaspoon vanilla extract
1 cup mashed banana
1/2 cup unsweetened applesauce
1/4 cup coconut oil

Recipe Directions for Vegan Banana Oat Carob Muffins

  1. Preheat oven to 400 degrees F. Lightly coat a muffin pan or use cupcake liners. In a medium sized bowl, whisk together spelt flour, carob powder, oats, sugar, baking powder, baking soda and salt.

  2. In a large bowl, combine vanilla extract, applesauce, milk and melted oil. Add the banana and mash well.

  3. Add the dry mixture to the wet mixture and stir until smooth. A wooden spoon works best, as this batter is fairly dense.

  4. Fill each cupcake liner about 3/4 the way up. Bake the muffins for 22-25 minutes, or until a toothpick can easily be poked through with no batter sticking to it.
