Recipe Ingredients for Vegan Banana Nut Muffins

4 bananas
1/4 cup oil
1 cup sugar
1 tsp vanilla extract
1/3 cup almond milk
1 cup all-purpose flour
1 cup oat flour
1/3 cup ground flax seed
1.33 cups chopped walnuts
1/3 cup brown sugar
1/4 cup flour
2 tbl oil

Recipe Directions for Vegan Banana Nut Muffins

  1. Preheat oven to 360 degrees

  2. In a large bowl, mash three of the bananas with a fork till soft. Cream together oil or vegan margarine and sugar, add remaining wet ingredients.

  3. In a separate bowl, combine together the flours, salt, baking soda, baking powder and spices. Add nuts, Fold 1/3 dry ingredients into wet ingredients and mix gently until mostly combined being careful not to overmix. Add another 1/3 dry ingredients and fold that in. Before adding the final third of dry ingredients gently toss the diced banana with them to thoroughly coat the banana in flour. Then add all to the wet ingredients and gently fold in.

  4. Grease or line a muffin tin and fill each until 2/3 full with batter. Top each muffin with rounded spoonful of crumb topping mixture. Bake 25 min. or until a toothpick comes out clean.
