The best vegan banana bread I've ever had. It is inspired by a recipe from the Veganomicon

Recipe Ingredients for Vegan Banana Bread

3 small bananas
1/4 c unsweetened apple sauce
1/4 c grapeseed oil
1/2 c organic sugar
2 tbsp molasses
2 c kamut flour
3/4 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt

Recipe Directions for Vegan Banana Bread

  1. Mash bananas, and add applesauce, oil, sugar, and molasses - mix well

  2. Mix dry ingredients

  3. Mix wet with dry until just blended

  4. Bake at 350 for approx. 50 minutes
