Good recipe I found on Vegweb for banana bread. This serves one big loaf, but it goes quick in this house! (And I am the only one that eats it for I am the only vegan here.) You can substitute apple sauce for olive oil if you wish.

Recipe Ingredients for Vegan Banana Bread

3 medium bananas
2 tbsps olive oil
2 cups flour
1/3 cup sugar
1/3 cup molasses
1 tsp salt
1 tsp baking soda
1/2 cup chopped walnuts

Recipe Directions for Vegan Banana Bread

  1. Preheat the oven to 350 degrees. Grease a loaf pan. Mix the mashe'd bananas and oil in a large bowl. Stir in the flour, vegan sugar, salt, and baking soda. Mix in the nuts. Pour the well blended batter into the greased pan and bake for one hour. Remove and let cool.

  2. I found this recipe works better than many I've tried since it sticks together much better, and is healthier for you since it doesn't require shortening and a lot of oil. Any oil will suffice howe'ver olive oil is the healthiest!

  3. Serves: 1 Loaf
