This banana bread tastes amazing, even though it's not really calorie conscious. And it's vegan. w00t!

Recipe Ingredients for Vegan Banana Bread

1 3/4 cups flour
1 1/2 cups brown sugar
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon yeast
3 mashed bananas
1 teaspoon almond extract
3/4 cup vanilla soy milk
5 teaspoons corn starch
1/2 cup vegetable oil
1 tablespoon cinnamon

Recipe Directions for Vegan Banana Bread

  1. preheat oven to 350 degrees

  2. mix all dry ingredients together thoroughly in a large mixing bowl except cinnamon

  3. mix in corn starch and vegetable oil (I prefer mixing ingredients by hand)

  4. Mix in soy milk and almond extract (almond extract is optional)

  5. Here's the fun part. Squish in the mashed up bananas and cinnamon

  6. Grease up your favorite bread pan (I prefer using Crisco vegetable oil cooking spray, then adding a thin layer of salt. Salt doesn't burn, so it helps a bit.) and pop it in the oven for 45-55 minutes.

  7. Enjoy! I like to put a homemade brown sugar maple glaze on top, but... well... it's pretty much packed with calories.
