Recipe Ingredients for Vegan Banana Bran Muffin

2 oz canola oil
4 oz unsweetened apple sauce
8 oz banana
1 tsp. vanilla extract
3 1/2 oz. light brown sugar
5 oz. flour
2 1/2 oz. wheat bran
1 tsp. baking soda
2 oz. chopped walnuts

Recipe Directions for Vegan Banana Bran Muffin

  1. Preheat oven to 375 and lightly grease a standard non-stick muffin pan.

  2. mash bananas in a large bowl. Add the canola oil, vanilla extract, and apple sauce and whisk together. whisk in the light brown sugar.

  3. In a separate bowl combine the flour, wheat bran, baking soda and chopped walnuts. stir together.

  4. Add the dry ingredients to the wet ingredients and stir to combine. batter will be thick and lumpy.

  5. scoop batter into prepared muffin tin.

  6. Bake for about 15 minutes, do not over bake otherwise they will be like eating a desert full of sawdust and no one likes dry bran muffins.

  7. Let cool in the pan for 5 minutes then gently twist to remove. Enjoy warm or let cool completely and store in an airtight container. They will keep on the counter for several days, in the freezer for several months (if they last that long). If frozen, just pop them in the microwave for 10-30 seconds until thawed and slightly warm.
