IMPORTANT: There are actually only 2 cups of flour in the recipe, but the calories miscalculated, so I had to add more. Also, divide the nutritional amounts (including calories) by 10. For some reason, the recipe calculator found the total of all ten muffins. Nevertheless, these muffins are delicious! For a tangy twist, disperse 1/2 cup of berries (blue, rasp, black, etc.) into the final mixture. My personal favorite and completely dairy-free =D

Recipe Ingredients for Vegan Banana Berry Muffins

19 cups flour
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
2 bananas
1/2 cups maple syrup
6 tablespoons vegetable oil
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
1/2 cup water

Recipe Directions for Vegan Banana Berry Muffins

  1. Heat oven to 375 degrees F.

  2. In a large bowl, combine flour, baking powder, baking soda, and salt.

  3. In a medium-sized bowl, combine remaining ingredients. Pour this into flour mixture and stir until JUST combined.

  4. [Optional] Add 1/2 cup of berries (blue, rasp, black, etc.).

  5. Spoon the batter into greased muffin tins to 2/3 full.

  6. Bake for about 20 minutes, or until muffins are risen, firm, and slightly golden on top. Makes 8-10 muffins.
