Vegan Baked Oatmeal Recipe

It's the consistency of a very thick oatmeal cookie. This is the only way I enjoy oatmeal. I took an old Amish recipe and "veganized" it for my 18 month old. I used less sugar and cut the oil with the applesauce. You can substitute vegetable oil instead of the coconut. It gives it a mild coconut flavor.

Recipe Ingredients for Vegan Baked Oatmeal

3 tbs Coconut Oil
1/2 cup unsweetened apple sauce
1/3 cup brown sugar
1 1/2 teaspoon vanilla
1 1/2 teaspoon baking powder
1 1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tbs bob's red mill flaxseed meal
1 cup Rice Dream Original Enriched
2 cups regular oats
1 cup quick cooking oats

Recipe Directions for Vegan Baked Oatmeal

  1. Melt coconut oil.

  2. Grease 1 1/2 quart baking dish. In a separate bowl add applesauce. Add brown sugar, baking powder, vanilla, cinnamon, and salt. Mix well, no lumps.

  3. Whisk in coconut oil and milk alternative, add flax eggs stir, then add oats. (The coconut oil will start solidifying again and that's fine.)

  4. Stir well, and refrigerate OVERNIGHT.

  5. Bake, uncovered, at 350 for 35-45 min, or until set in the middle.

  6. Serve hot with warm milk alternative poured over or a little extra brown sugar sprinkled on top.

  7. Optional add ons: raisins, dried cranberries, dried blueberries, nuts..etc
