1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 oz Bread Crumbs, Dry, Grated, Plain
0.13 cup Panko
0.13 cup Soymilk Plain
1 1/2 tablespoons Nutritional Yeast
1/2 cup Shreds
1/4 tsp Sea Salt
1/4 tablespoon Oregano

Recipe Directions for Vegan Baked Eggplant

Slice, dip in soymilk, dip in breading, broil at low for 5 minutes or high for 3 minutes. Bake for 15 minutes at 350 F.
