may be made ahead and refridgerated until needed. Then cut into serving sizes and finish in the oven, may be pan fried in olive oil.

Recipe Ingredients for vegab polenta with red beans and fresh tomato salsa

3.5 cup (8 fl oz) Water
1 cup Cornmeal, Degermed, Enriched, Yellow
1 serving, raw Cilantro
4 small (3" long) Onions, Spring Or Scallions
1.5 cup Dark Red Kidney Beans

Recipe Directions for vegab polenta with red beans and fresh tomato salsa

  1. cook cornmeal by bringing water to bowl, reducing the heat and slowly whisking in cornmeal. cook, stirring frequently until thick 30-40 minutes.

  2. add cilantro, salt and pepper ( and 1 tbs olive oil). Spoon into a lightly oiled 10 inch square baking dish., refrigerate until firm.

  3. cook beans, cilantro and salsa into a medium skillet, simmer to blend the flavors about 5 minutes.

  4. preheat overn to 375, cut the polenta into 4 squares, place on a lightly oiled baking sheet. baked until hot and golden brown.

  5. move to serving dishes, add fresh salsa on top and serve hot.
