Light Veg*n Tacos that can easily become non-Veg*n with a little chicken added! These are perfect for a light lunch and can be enhanced with beans for protein and/or more vegetables for variety. This is prepared quickest with leftover rice and prepared guacamole.

Recipe Ingredients for Veg Tacos

38 grams Tortillas, Ready-to-bake Or -fry, Corn
1/2 cup Rice, Brown, Long-grain, Cooked
1/2 pouch 100-Calorie Snack Packs Guacamole
2 slice, thin/small Tomatoes, Red, Ripe
1 leaf outer Lettuce, Cos Or Romaine
1 dash Salt, Table
1 dash Pepper
1/2 oz cheddar cheese

Recipe Directions for Veg Tacos

  1. Place the two tortillas on a microwave-safe plate.

  2. Add cheese, rice, salt, and pepper to each tortilla.

  3. Heat for 45 seconds to a minute.

  4. Remove from microwave and add half of the lettuce to each then guacamole and tomato.

  5. Eat immediately or wrap individually in aluminum foil for safe transportation.
