Recipe Ingredients for Veg Southern Food: Black-Eyed Peas

1 cup Blackeyed Peas
15 oz crushed tomatoes
1 medium onion
4 cloves garlic
1 T cumin
1/2 T nutmeg
1/2 T allspice
2 cups fresh spinach
1/2 cup vegetable broth
1 Salt
1 Pepper

Recipe Directions for Veg Southern Food: Black-Eyed Peas

  1. Cover the black-eyed peas with water and soak for one hour. Drain.

  2. Chop the onion and dice the garlic. Saute onion & garlic over medium high heat for about five minutes. Add the drained black-eyed peas, crushed tomatoes, spices, and vegetable broth.

  3. Bring to a boil and reduce heat to medium low. Simmer for 30-45 minutes until black-eyed peas are cooked through. Add spinach and cook for another 3-5 minutes, until cooked.

  4. Serve with the grain of your choice! I?ve had it with cornbread and millet ? it would be great over rice, quinoa, or cousous too.
