Recipe Ingredients for Veg Soup

1 (pound) carrots, sliced
3 (medium) onions, chopped
2 cups celery, chopped
56 oz. canned tomatoes in juice, crushed
6 cups green cabbage, sliced
48 oz. low sodium chicken broth
6 cups water
1 (pounds) zucchini, sliced
1 tablespoon garlic, chopped
1 teaspoon olive oil

Recipe Directions for Veg Soup

  1. Cook carrots, onion, celery, garlic 8 min stirring occasionally

  2. Add tomatoes and liquid, break w/spoon. Add cabbage, green beans, broth, water, 1 teaspoon salt, 1/4 teaspoon black pepper. Heat to boiling.

  3. Reduce heat to low, cover and simmer ten minutes.

  4. Increase heat to high, stir in zucchini. Heat to boiling.

  5. Reduce heat to low, cover and simmer ten minutes, until all vegetables are tender.
