Veg Risotto Recipe

veg risotto side dish if you want it as a main use 2 cups of rice and more veg

Recipe Ingredients for veg risotto

1 cup arborio rice
1 onion
1 clove garlic
2250 ml stock
1 tbsp olive oil
1 small sweet potato
1/2 cup cauliflower
1/2 cup beans
1 carrot
1/4 cup parmasan cheese
1 tbsp unsalted butter
1 pinch salt
1 pinch pepper

Recipe Directions for veg risotto

  1. saute onion and garlic in oil

  2. add rice

  3. laddle in hot stock one laddle at a time disolving before you add the next

  4. meanwhile steam veg

  5. add parmesan when all stock is absorbed and rice is cooked the stir through butter and season

  6. place into bowls top with veg
