Vegetarian cottage pie... sort of. Add whatever veg is in the fridge! Add spice/seasoning as you like it!

Recipe Ingredients for Veg pie

604 grams Sweetpotato
1 medium raw Leeks
2 stalk, medium (7-1/2" - 8" long) Celery
1 medium raw Onion Red
1 medium Carrots
4 serving Tomatoes, Crushed, Canned
210 grams Mixed Bean Salad
2 1tsp Olive Oil
1 oz Gravy

Recipe Directions for Veg pie

  1. Peel and boil sweet potato for 20mins.

  2. Meanwhile chop all veg and soften in pan with olive oil for 5-10 mins.

  3. Add tinned tomatoes and mixed beans and simmer for 10-15 mins.

  4. Pour veg mix into an oven proof dish.

  5. Mash sweet potato and top veg mix with it.

  6. Put in the oven for 15-20 mins.
