Recipe Ingredients for Veg Greek Meatballs in a Fragrant Tomato Sauce with Feta Cheese

24 oz Seitan Traditional
8 oz Cottage Cheese, Lowfat, 1% Milkfat
8 oz Breadcrumbs
1 small Onions
1 medium Egg, Whole
3 tbsp Lemon Juice, Canned Or Bottled
1 oz Dill Weed, Fresh
2 tbsp Parsley
2 serving Ground Cumin Spice
1 tsp Baking Soda
0.5 tsp Allspice, Ground
0.25 tsp Cinnamon, Ground
2 tbsp Olive Oil
25 oz Tomato Sauce
8 oz Reduced Fat Feta Traditional Chunk

Recipe Directions for Veg Greek Meatballs in a Fragrant Tomato Sauce with Feta Cheese

  1. 1. Pulse seitan in food processor until finely ground. Transfer to bowl, and add all ingredients except oil, tomato sauce, and feta. Mash mixture with hands or potato masher until mixture comes together. Season with salt and pepper, 
if desired. Chill 30 minutes.

  2. 2. Preheat oven to 350F. Coat baking dish with oil. Scoop seitan mixture into golf ball?size meatballs, and place in prepared baking dish. Bake 20 minutes.

  3. 3. Pour tomato sauce over meatballs, and sprinkle with feta (if using). Bake 30 minutes, or until sauce is bubbly
