baseless quiche - use whatever you want as the filler!

Recipe Ingredients for veg and goats cheese quiche

2 onions
1/2 cup brown sugar
2 tbsp balsamic vinegar
3 tomatoes
2 bell pepper
4 eggs
100 g greek yogurt
1 cup 1% cottage cheese
1/4 cup flour
1 tsp salt
1/4 tsp pepper
200 g goat cheese

Recipe Directions for veg and goats cheese quiche

  1. prepare your 'filler' ingredients as you like them (roasted, sautéed etc)

  2. in a food processor put in all the ingredients at once (leave out cheese and fillers!)

  3. blitz til smooth

  4. add to filler

  5. pour into a greased baking tray

  6. put in the oven for 15mins at 325 degC

  7. add the cheese to the top and put in for a remaining 30mins

  8. allow to cool, then refrigerate
