the 'oh no, I've ordered two veg boxes this week by mistake' veg curry. Warning, it's big! You'll want to freeze the left overs.

Recipe Ingredients for veg curry

567 g onion
1 tbs olive oil
4 tbs Curry Paste
3 tsp Bouillon
547 g potatoes
300 g broccoli
100 g red lentils
425 g cauliflower
306 g courgette
2 bananas
66 g carrot
182 g mushrooms
400 ml coconut milk
1 tbs tomato paste
400 g green beans
72 g almonds
100 g sweetcorn

Recipe Directions for veg curry

  1. Chop all veg into bite sized pieces

  2. Fry onions in olive oil

  3. Add curry paste and fry for another minute or so.

  4. Add potatoes, cauliflower, lentils, 1 banana, carrot, salt, mushrooms, bouillon, tomato paste and coconut milk.

  5. Simmer for 30 mins or until potatoes are done.

  6. Add courgettes, chick peas, other banana, green beans, chopped almonds and broccoli

  7. Cook for another 10 minutes.
