Veg Curry Recipe

Mostly vegetarian curry (a little leftover bison added for kicks) easily made without.

Recipe Ingredients for Veg curry

1 yellow onion
1 red potato, large
4 carrots, medium
3 T. Ghee
2 T. Olive oil
5 T. curry powder
1 jalapeno pepper, medium
1 zucchini, medium
3 cups bok choy
8 mushrooms
1 1/2 oz. ground buffalo
2 T. mango chutney
3 T. honey
1 T. soy sauce
2 1/2 cups chicken broth, low-sodium
1 t. corn starch
1/4 cup ground almonds
1/4 cup coconut, fresh

Recipe Directions for Veg curry

  1. Chop onion, potato and carrots and sautee in melted ghee

  2. add curry powder ingredients and stir constantly until aromatic

  3. Add Olive oil

  4. Add chicken stock and cook 20 min. until veggies are to the teeth

  5. Add remain vegetables except bok choy

  6. mix 1 tsp. of corn starch with 3 oz. water and stir well, add to mixture, stirring frequently to thicken

  7. Add coconut

  8. When thick and veggies are cooked add chutney and almonds. Serve over rice.
