Recipe Ingredients for Veg Chilli with egg

4 oz Tomatoes

Recipe Directions for Veg Chilli with egg

Fry onion, add chopped fresh chilli, garlic and ground cumin, add mushrooms, chopped bell peppers and fresh chopped tomatoes. Add a splash of water and simmer until tomatoes have mostly broken down. Cook rice and while it's cooking, make a well in middle of the chilli. Break an egg into it and cook until done (I prefer the yolk to be runny). Serve on top of rice topped with loads of chopped coriander.
