Recipe Ingredients for Veal Scaloppini with Saffron from Giada De Laurentiis

2 sprays Pam
1/2 lb. veal steaks
1 onion, shallots, sliced
6 oz. mushrooms, Crimini, sliced
1/4 cup white wine
3/4 cup beef broth, low-sodium
1/8 tsp. saffron threads
1/4 cup skim milk
2 tbsp. Smart Balance, melted
1/4 cup peas, frozen and thawed
1 tsp. flour
1/2 tsp. salt
1/8 tsp. black pepper, ground
1 tbsp. parsley, flat-leaf, chopped

Recipe Directions for Veal Scaloppini with Saffron from Giada De Laurentiis

  1. Spray large non-stick skillet with Pam Olive Oil spray. Season the veal with salt & pepper. Heat skillet on medium-high heat, cook the veal until golden and cooked through, about 2 to 3 minutes per side. Transfer the veal to servin g plate and cover with foil to keep warm. Turn the heat to medium, add the shallots and garlic, cook until tender, about 2 minutes.

  2. Deglaze the pan with the white wine. Using a wooden spoon, scrape all the brown bits from the bottom of the pan. Cook until the wine is almost evaporated.

  3. Add the beef broth and saffron threads, bring to a simmer and reduce for 5 minutes. In a microwave safe bowl, melt the Smart Balance. In a seperate bowl add the skim milk, melted Smart Balance and 2 tsp. flour. Whisk until smooth. Stir the milk mixture in the skillet, add salt and pepper, add the peas. Stir to combine and simmer for 1 minute. Pour the sauce over the veal. Sprinkle with parsley and serve.
