Recipe Ingredients for Veal, Red Pepper, and Potato Stew

4 tbsp olive oil
1 lb veal
2 red peppers
1 large onion
2 potatoes
1 tsp salt
1 tsp basil
1 tsp parsley
1 tsp black pepper
1 tsp red pepper flakes (optional)
1/4 cup red wine
14 oz

Recipe Directions for Veal, Red Pepper, and Potato Stew

  1. Chop Onion

  2. Mince Garlic

  3. Core and cut peppers into one inch square

  4. Cut stew veal, if necessary, into roughly one inch pieces

  5. Peel, halve and slice potatoes thin

  6. In a large skillet add one tbsp olive oil, heat, cook onions over medium heat until transllucent (4 to 6 minutes)

  7. Add garlic and cook for one to two minutes

  8. Remove with slotted spoon.

  9. In the same skillet brown veal. Add olive oil if necessary. May need to do in batches. When all veal brwoned return veal, onion, garlic to skillet. Add tomatoes, basil, parsely, salt, black pepper, red pepper flakes.

  10. In a second skillet add 1 tbsp olive oil and saute peppers until soft. Remove from pan.

  11. Add two tbsp olive oil and potatoes to pan.

  12. Brown potatoes

  13. When veal is tender add red peppers and potato to veal, tomatoes, etc. and cook for ten to fifteen minutes.

  14. (May need to add water to veal, tomato, etc if liquids cook down before veal is tender)

  15. Serve
